Make it With MushroomsLike a bad tabloid story, mushrooms have gotten a bad rap for being largely nutrient free — but it turns out, that story just isn't so. These fungi (their technical description) are loaded with selenium, a mineral that helps increase your immune system and possibly decreases your risk of cancer. Besides their impressive health benefits, mushrooms are also low in calories, which means you can nosh on them without drastically impacting your diet. Best of all, since there are so many varieties to choose from, it's hard to get bored — you can use them in almost any dish!
Here are few commonly available mushrooms worth trying:

White: This common variety can be found in grocery stores. Use them raw or cooked in salads and soups, or sauté them with a little olive oil for a tasty side dish.
Cremini: For a more intense, earthy flavor, these darker-colored mushrooms can be used in place of white mushrooms in almost any recipe; however, they're best when cooked.
Portobello: Amazing as an entrée and so versatile — portobellos can be grilled, stir-fried, or stuffed and baked — they are a larger variety of the cremini mushroom.
Shiitake: Meaty, yet flavorful, shitakes are another versatile mushroom — they can be used in stir-fries, soups, and side dishes, or even as a meat substitute!
